The Tamilrasigan, or as they are more commonly known, the Indian long-necked turtle, is a freshwater turtle that lives in the Indian subcontinent. There are many different species of long-necked turtles, but the Indian long-necked turtle is by far the largest and most well-known. They can grow up to 20 inches long, and their long necks allow them to eat aquatic plants that are otherwise inaccessible. These turtles can live up to 40 years and are an important part of the local ecosystem. This dish is a speciality of the southern Indian state of Tamil Nadu, where it is called 'Kozhukkattai'. It is a sweet and sour dish made with coconut, jaggery, and tamarind. The main ingredient of this dish is the grated coconut, which is soaked in water and boiled in syrup.
